A Sichuan dish, Chengdu Chicken is named after the city of Chengdu, which is the capital of Sichuan province. Hot bean paste is made with fermented soybeans and crushed chilies. (Be sure not to confuse it with chili paste). Serves 3 – 4 as a main dish with rice or 4 – 6 as part of a multicourse meal.
